Tragacanth is also known as Gum Tragacanth, Gond Katira, Katira Gond and Goond Katira.

Botanical Name of Tragacanth: Astragalus brachycalyx

Place of Origin: Iran.

Tragacanth is an odorless, edible, dry, viscous and tasteless gum which is obtained from the dry sap of “Astragalus brachycalyx”. This gum is mainly produced in Iran and also in some parts of Iraq but its largest trader and consumer is India. In India, it is known as Gond Katira. It is used in making of cakes, ice-creams and pastries. In curries, soups & sauces it is used as a natural thickener, stabilizer, textural additive and a binding agent. Gum Tragacanth is also an important ingredient of world famous traditional Ice-cream from India called Falooda.

 Steps on using Tragacanth or Gond Katira:

  1. Put a piece of Tragacanth in a bowl filled half with water.
  2. Cover the bowl and leave it for 6 to 8 hours.
  3. Now, it will transform into a thick paste with Increase in quantity.
  4. Drain excess water.
  5. Use it the way you like! (For example, You can add in your Banana Shake).
